Crete is famous for its traditional spirit raki but this ouzo is proof that Cretans are capable of creating remarkable greek spirits of all kind. Stamatakis Bros has been producing the excellent traditional raki Kretaraki for a long time but they expanded their production to traditional Cretan ouzo. When served ouzo is usually accompanied by appetizers (mezedes) such as salted snacks, cheese, olives, rusks, octopus, salads among others. It is served in small or tubular glasses and cold water or ice are added. After the addition of water, the drink tums milky white, the typical due to the existence of anise.
The threshold of the history of ouzo are unknown. It is presumed that the drink was produced with a similar taste even in the ancient times. What's for certain however is that it was already known during the period of the Byzantine Empire. The production of ouzo was increased and spread locally in Greece after the independence from the Ottomans.
The name ouzo has been consolidated as Greek since 1989 and the drink can be produced and named like that only in Greece.
Ouzo is a mixture of spirit, water and other sweet-smelling herbs, including anise. The distillation takes place in special distillation flasks (boilers) which are preferably made of copper. After the ingredients are mixed, the mixture is left to boil for more than once.
