Κollaros family from southern Crete produces the excellent honey Melissa Vasilissa from beehives placed in the Asterousia mountains. In these wild mountains of southern Crete, thyme grows naturally, but there is also a great variety of wild Cretan herbs. In some areas there are also several coniferous trees. Thus the bees in the Asterousia mountains feed on a variety of flowers resulting in a highly aromatic kind honey, Melissa Vasilissa, which means Queen Bee. Angeliki, the producer of the honey, uses it to create delicious honey treats such as fontan and pasteli bars with sesame and fruits.
